Chocolate-Peanut Butter Parfait

I have been making these for years and they are the perfect "lite" dessert that remind me of a Reese's Peanut Butter Cup.

1 box of Jello (or generic brand) sugar free chocolate instant pudding mix
2 cups of skim milk
3 tablespoons of peanut butter
2 tablespoon of thawed Cool Whip lite

-Beat pudding with a whisk for 3 minutes and place in frig for 5 minutes or longer
-Mix peanut butter and cool whip
-Spoon pudding mix in parfait glasses (2 or 3) then the peanut butter mixture and top with pudding mix.

Refrigerate for 20-30 minutes

Lemon Cheesecake Yogurt Cups

These sound DELICIOUS and look like a perfect summer dessert!  Can't wait to make these very soon.

12 reduced fat vanilla wafers
8 oz 1/3 less fat cream cheese, softened
1/4 cup sugar
1 tsp vanilla
6 oz fat-free vanilla Greek yogurt
2 large egg whites
3 tbsp lemon juice
1 tbsp lemon zest
1 tbsp all purpose flour
24 blackberries

Heat oven to 350°.
Line cupcake tin with liners. Place a vanilla wafer at the bottom of each liner.
Gently beat cream cheese, sugar and vanilla until smooth using an electric mixer. Gradually beat in fat free yogurt, egg whites, lemon juice, lemon zest and flour. Do not over beat. Pour into cupcake liners filling half way.
Bake 25 minutes or until center is almost set. Cool to room temperature. Chill a few hours in the refrigerator.
Top with fresh berries and powdered sugar.
